INGREDIENTS
Ingredients
1. Chocolate cake sponge.
2. Dark couverture 40g
3. White couverture 40g
4. Amul fresh cream 40g
5. Whipping cream 170g
6. Fab mango pickle essence
7. Strawberry compote 80g
8. 1 small chilli. few cherry tomato. mint leaf for decoration
METHOD

Step 1.
Make normal chocolate sponge cake.
(Weight around 210g approx )

Step 2.
1. Take one part dark n one part white couverture + one part Amul fresh cream
Combine all at room temperature n heat for roughly 20 / 30 seconds or till it melts ..
keep aside
2. Whip 170g of whipping cream. (TIP ::As u will add ganache it will harden ... hence ...Do not over whip. keep it a bit soft )
3. Add 80g of whipped WC to the ganache mix well. Then add few drops of Fab Mango Pickle essence to give it a twist of Fusion. Mousse is ready

Assembling

Step 3.

Slice the sponge
soak it with strawberry compote
Fill it with Choco pickle fusion mousse.
Frost with left over WC.

Step 4.
Decorate with strawberry compote... small green chilli ... cherry tomato.... Mint leaf.
