INGREDIENTS
For Thandai Rabdi Mousse 500 ml Full Cream Milk 2 to 4 Tbsp Sugar 3 to 4 tbsp Thandai spice masala powder I have used homemade thandai masala 1 tsp fab Thadai oil soluble premium essence 100 gm Melted white chocolate ¾th Cup Whipped Cream 12 to 15 small gulab jamuns . Dry rose petals, Pistachios, saffron and Almonds for Garnishing |
METHOD
In a heavy bottom pan, add milk. Let it come to a boil on high flame and then reduce the flame and let it reduce.
Keep stirring occasionally. Let it boil until the milk has reduced to more than ½.
Add in sugar and Thandai masala powder,fab thadai essence and let it cook until the Rabri has thickened.
Switch off the flame and let it cool completely.
Fold melted white chocolate in the Thandai Rabri very gently, & add whipped cream in to chocolate rabdi mixture for make Thandai Rabri Mousse.
Assembling
Now pipe the mousse into the serving glass & place gulabjamuns over thandai rabdi mousse.
Again place gulabjamuns over mousse again.
Now again pipe with thandai rabdi mousse.
Place a gulab jamuns on top of the mousse
Place a few pistachios ,saffron & Almonds & dry Rose petals.
Chill in the refrigerator till well set and serve chilled.
