INGREDIENTS
3 vanilla cake sponges made in different colours
Cream cheese - 300 gms
Guava compote -100 gms
Litchi compote -100 gms
Castor sugar -100 gms
Colours of your choice
Whisk the cream cheese with sugar amd keep ready
Make litchi compote by cooking 1 cup of deeded litchi with sugar till all water is evaporated. Add litch essence generously
Similarly make guava compote by cooking desseded guava pieces with sugar and adding guava essence

Assembling

Sprinkle some sugar water over the first layer of sponge and make a well with cream cheese frosting . Add guava compote generously, cover with frosting .
Repeat the same process with second sponge layer , litchi compote and frosting . Cover with the third sponge and decorate the cake as you like .
Refrigerate the cake nicely and cut a thick nice wedge for yourself to enjoy a summer burst of flavours .
Optional - you can add a few drops of lemon essence to the creamcheese frosting if you like .
