INGREDIENTS
Ingredients:
�..." cup orange juice
¼ cup water
¼ cup dried apricots (chopped)
¼ cup dried cranberries
¼ cup raisins
¼ cup fig(chopped)

Method:
Cook the dry fruits in orange juice & water mixture for 5-8 mins medium flame or until the dry fruits plump up.

Cake batter -

DRY INGREDIENTS:
1.5 cup Maida
¼ tsp ginger powder
¼ tsp cinnamon powder
1 tsp Baking powder
½ tsp Baking soda
1 tsp Orange zest

WET INGREDIENTS:
½ cup oil
¾ cup Brown sugar
1 cup curd
1 tsp (fab rum plum essence )
�...� cup milk

Dry fruits:
¼ cup each chopped almonds,cashews,pistachios
METHOD

PREHEAT the oven to 160deg C.
1.Sift the dry ingredients to a separate bowl & mix.
2.Whisk together ingredients mentioned under the WET.
3.Combine the dry ingredients with the wet in batches & fold gently.
4.Add the pre cooked dry fruits & the dry fruits mentioned above & mix gently. Reserve little bit of precooked dryfruits for the last.Add milk to adjust the consistency of the batter.
4.Pour the cake batter to a greased & lined 8inch round pan. Tap twice to remove trapped airbubbles. Add the reserved dry fruits on top.
5.Bake in a preheated oven for 1 hour at 160 deg C.
This cake is cooked slowly at a low temperature compared to normal cakes to get the right texture & flavour
