Short Recipe Description
Plain Flour - 1 1/2 cups
Baking Soda - 1/2 tsp
Baking Powder - 1 1/2 tsp
Butter - 4 tbsp
Oil - 4 tbsp
Sugar - 1/3 cup
Condensed Milk - 3/4 cup
Milk - 1 cup
Vinegar - 1 1/2 tsp
Fab Mix Fruit Oil Soluble Essence - 1 tsp
1cup - whipping cream
8-10 - cherries
2tbsp - pomegranate kernels
1- kiwi chopped
1/2 - kiwi diced
1tbsp - sprinkler
Red food colour
firstly, in a large mixing bowl take butter, oil and sugar.
beat well until the mixture turns creamy and soft.
now add condensed milk and continue mixing well to ensure the mixture is well combined.
further, place a sieve and add maida, baking powder and baking soda and seive them.
now add milk gradually and continue mixing well making sure there are no lumps present .
now add the vinegar to the batter and continue to mix.
add the mix fruit essence making sure everything is well combined.
transfer the batter into the muffin moulds.
place the muffin mould into the preheated oven.
Bake at 180 degree celsius for 18-20 minutes.
Let muffins cool down completely before decoration..
whip a cup of whipping cream till stiff peaks.
take the whipped cream in a piping bag laced with red food colour.
make swirls of cream to get dual tone frosting on the cup cakes.
now decorate the cupcakes with diced kiwi, cherries and sprinkles.
The important thing to keep in mind when baking eggless mix fruit cupcake is that all ingredients should be at the room temperature. Remember to add baking powder, baking soda and vinegar. They react together to give a nice texture to the eggless mix fruit cupcake.
