So when I went through the list of options available to us when the Summer Fkavour Challenfe was announced , I was god damn sure that I will be making this plum gelato !
Plum - aalobukhara , as we all know the humble fruit is quiet tangy , sweet , beautiful colour, all in one
So I decided to pair the humble plum with classic vanilla amd just a tiny bit of Bergamot to enhance all the three flavours and get the best out of summer fruits

Ingredients
Milk -1 ltr
Sugar - 1 cup
Cornflour-3 tbsp
Plum - 250 gms
Lemon rind -1 lemon
Sugar -1/2 cup
Method
Chop plum into small pieces and cook the fruit with 1/2 cup sugar till soft and mushy
Once cool sieve the mixture and add a few drops of plum essence
In 1 tbsp of powder sugar mix lemon rind and add a few drops of bergamot essence
Boil milk and add 1 cup sugar , boil on low flame for 10 mnts and add vanilla essence (optional) add cornflour slurry slowly and cook till the mixture thickens .
Now once cool , freeze the mixture .
After it has set partially , give it a good mix with sugar and lemon rind with a hand blender and spread the mixture in the container in which we finally set out gelato .
Spread a layer of plum purée over this and make swirls with a knife
Set till it harderns .
Enjoy the gelato with all the fruit freshness and trust me the ripples of plum and vanilla mixes with tangy bergamot tastes like heaven
Assembling
Assemble on a flat dish by putting huge scoops of the gelato and a few sprigs of mint
