Short Recipe Description

Shahi tukda is a royal piece of mughlai dessert. It is authentically made with ghee fried bread pieces soaked in saffron infused sweetened reduced milk. I have given touch of king of fruits, mango. Apyura premium Fresh Mango spread, gives it next level enhanced rich flavour.

INGREDIENTS
For frying
Bread slices 3-4
Ghee as required

For mango rabdi
Mango 1 big pureed
Milk 500 ml
Milk powder 2 tbsp
Sugar 2 tbsp
Apyura premium Fresh Mango spread 1.5 tbsp
Cardamom powder 1 pinch

For garnish
Pistachio
Mango cubes
Glazed cherry
METHOD

Heat ghee in a pan and shallow fry bread pieces cut into triangles. Keep aside.

Dissolve saffron strands in a little
milk.

Add milk powder to remaining milk and heat it in a heavy bottom pan.

Simmer the heat when it comes to a boil.

Let it cook till it is reduced to almost ½.

Add sugar and stir the mixture at regular intervals or else it can burn.

Add in saffron milk and cardamom powder.

Mix well.

Remove from the flame and allow it to cool.

Once at room temperature, mix in mango pulp and Apyura fresh mango premium spread.

Assembling

Put fried bread triangles in a serving tray.
Pour over prepared mango rabdi.
Garnish with pistachio flakes, mango cubes and glazed cherry.

Baker Tips/Notes

Serve chilled as fried bread tukda will absorb mango rabdi and will taste devine.
