INGREDIENTS
Cookie:
Sugar - ¾ cup
APF - 2 cups
Butter - 1 cup
Fab Premium Fresh Passion fruit - 1/8 tsp
Egg Yolk - 1

Mango Passion fruit preserve:
Fresh Mango puree - 9 cups
Sugar - 3.5 cups
Apyura Premium Spread Fresh Mango - 2 Tbsp
Fab Premium Passion Fruit - ¼ tsp
Lemon juice - 2 tbsp
METHOD

Cookie
1- Beat butter and sugar till pale and combined.
2- Add Fab Premium Fresh Passion Fruit and beat to incorporate.
3- Separate yolk from egg white.
4- Add egg yolk and beat further.
5- Fold flour, combine and make a cookie dough.
6- Chill in fridge.

Mango Passion fruit preserve
1- Scoop out mangoes and blend them in an electric blender.
2- Add some finely cut pieces also.
3- Combine mango and sugar and cook them in a shallow pan.
4- As the water evaporates, the puree thickens and darkens.
5- When it is almost done, add Apyura Premium Spread Fresh Mango, Fab Premium Fresh Passion fruit essence and lemon juice.
6- Remove from fire and allow it to cool.

Assembling

1- Roll cookie dough on the palm and make a dent with your thumb.
2- Add the preserve into the cavity.
3- Chill and bake at 160o C till done.
