Short Recipe Description

Litchi Blueberry cake is mildly sweet which goes really well with tea or coffee.

INGREDIENTS
Apf/Maida 130 g
Condensed milk 150 g
Thick curd 50 g
Salted butter 70 g
Milk 30 ml
Dried blueberries 50 g
Fab Litchi essence 1 tsp
Baking powder 1 tsp
Baking soda 1/2 tsp
METHOD

* In a mixing bowl sift together Apf/Maida, Baking powder and baking soda.
*In another bowl mix butter, condensed milk, curd and Fab oil soluble Litchi essence. Continue mixing till you get homogeneous mixture.
*Now add dry ingredients into this wet mixture and mix everything together by cut and fold method with spatula. Avoid over mixing.
*Add blueberries and milk into the batter and give it a mix.
*Pour this batter into greased tin ( apply a thin layer of butter and dust it with flour) and bake in preheated oven at 160 degrees Celsius for 40 minutes.
* After 40 minutes check with the skewer if it comes out clean then your cake is ready.
*After taking out from the oven let your cake rest in the tin for 5 minutes before de moulding.
*Cool it completely on a wire rack or enjoy hot with tea or coffee.

Baker Tips/Notes

*All the ingredients should be at room temperature.
*Coat your blueberries in 1 tbsp of flour before mixing into the batter so these will not sink at the bottom while baking.
*The batter should not be too thick nor too runny.
*Do not open oven door in the middle of baking otherwise the cake would sink.
*Loaf tin size is 8*2
