INGREDIENTS
Ingredients for the filling:
1. All purpose flour - 150g
2. Baking powder - 1 tsp
3. Baking soda - ½ tsp
4. Salt - ¼ tsp
5. Oil - 62 ml
6. Sugar - 75g
7. Milk - 60 ml
8. Yoghurt - 60 ml
9. Lemon juice - 2 tbsp
10. Lemon jest - 1 tbsp
11. Fab premium Key Lime essence - 4 drops

Ingredients for the filling:
1. Fresh cherries - 250g
2. Passion fruit concentrate - 50g
3. Italian Basil - 1 tsp
4. Icing sugar - 200g
5. Fab passion fruit essence - 2 drops

Ingredients for the decoration:
1. White chocolate compound - 100g
2. Basil seed - 2 tsp
3. Fresh cherries - 4-5 pieces
4. Fab passion fruit essence - 2 drops
METHOD

Preparation of cake:
1. Sieve flour, baking powder, baking soda, and salt together.
2. In another bowl, mix oil, sugar, and yoghurt properly.
3. Add lemon juice, lemon jest and fab key lime essence into the wet mixture.
4. Now mix the dry mixture with the wet mixture alternatively adding milk into it.
5. Pour the dough into the properly greased travel cake mould and Bake it in the preheated oven at 180C for 35-40 min.

Preparation for the filling:
1. Add cherry puree and passion fruit concentrate and basil leaves into the heavy bottom saucepan and heat it to make the mixture thick.
2. Now add icing sugar and cook for some more time to get the thick consistency.
3. Add Fab passion fruit flavour.

Preparation to decorate the cake:
1. Fill the centre of the cake with the cherry basil passion fruit filling.
2. Cover the cake with melted white chocolate.
3. Now decorate the cake with passion fruit concentrate and fresh cherries.
