Short Recipe Description

The ice creams we enjoy today are said to have been invented by China, introduced to the Western world by Italy, and made accessible to the general public by France..

1. Chakka or hungcurd - 500grm
3. Mango - 1pcs
4. Powder Sugar - 1/2 cup.
Ingredients for ice cream:
1. Full fat Milk - 500grms.
2. Custard powder - 2-3 TSP.
3. Whipped cream - 1 cup
4. Sugar - 1/2 cup
5. Feb Mango essence - 4-5 drops.

1. First transfer plain yogurt to a fine-mesh strainer and keep the strainer over a large bowl. Keep the bowl in the refrigerator for 3-4 hours.
The liquid will drip from the yogurt making it thick and creamy. The thick yogurt that is collected now is called CHAKKA.
2. Transfer the thickened yogurt to a medium mixing bowl. Add sugar and whisk it properly with the help of until creamy consistency.
3. Now add ½ cup cut mango chunks and again whisk it properly until creamy smooth consistency.
4. Now Refrigerate the mango shrikhand for a few hours.
Process for ice- cream :
1. Boil the mix completely and switch off the flame .
2. In other small bowl take custard powder
and cold milk 3-4 TSP and mix it properly.
3. Now pour this mixture into the boiled milk and stir continuously.
4. Again switch on the flame and add sugar .
5. Now take 3-4 boil of milk. And then switch off the flame and cool down the Milk completely on a room temperature.
6. Now refrigerate it for over night or until become Rock Hard.
7. Now take out from the refrigerator and keep melting on room temperature for 1hr .
8 . Now add whipped cream and whisk it completely until smooth and fluffy.
9. Now add this mixture into the aamrkhand and add 4-5 drops of Feb mango essence and whisk it again and then set the mixture into the kulhad ..
10 . Keep the kulhad in airtight container and refrigerate it for over night ...

You can decorate with mangoes, cherries and mint leaves.
