Short Recipe Description

Ispahan - a subtle combination of rose, litchi and raspberry, presented as a verrine.

INGREDIENTS
Litchi Mousse :
Litchi - 15 (fresh or canned)
Whipped cream - 120 ml
Agar agar powder - 10 gm
Water - 50 gm
Rose water - 1 tsp
Fab Litchi flavour - few drops

Raspberry Jelly :
Readymade veg jello pack

Litchi pieces - few as per requirement
Rose petal for garnish
METHOD

Raspberry Jellly :
1. Cook as per package instruction

Litchi Mousse :
1. Take deseeded litchi pieces and puree it in a grinder.
For smooth puree,strain the mixture.
2. Mix agar agar powder with water and let it bloom for 5-10 mins.
3. Add litchi puree in a pan and heat the mixture.
4. Add bloomed agar agar powder and heat the mix to activate the agar agar powder.
5. Take it of the heat and let it cool a bit.
6. Add rose water and fab litchi flavour and mix gently.
Keep it aside.

Assembling

1. Take verrine glasses and put chopped litchi pieces at the bottom.
2. Add jelly mixture and allow it to set in fridge for some time.
3. Once set, pipe the mousse mixture over the jelly layer neatly.
4. Garnish with rose petals and rest in fridge to set and flavors to mingle.
Enjoy this subtle cold dessert on a hot summery day.
