Short Recipe Description

Delicate natkhat guava macarons

INGREDIENTS
Almond flour 45 gms
Castor sugar 28 gms
Icing sugar 45 gms
Egg white 20 gms
Dark chocolate -100 gms
Cream 50 gms
Guava essence
Lemon essence
METHOD

Whisk together egg white and castor sugar , adding castor sugar in small bursts till sugar is completely incorporated
Now add sifted almond flour and icing sugar amd mix well till We achieve ribbon like consistency.
Add colour and pipe out macarons .
Make ganache and add essence , fill out macarons and chill them for enhanythe flavours

Assembling

Macarons are very delicate
Handle carefully . Mix a little gold dust with evaporex and paint the shells

Pls take care of the temperature, extremely high temperatures lead to cracking of shell
