Short Recipe Description
Chocolate and coconut makes an irresistible pairing. And the spice mix enhances the flavor of the cookies. No doubt these cookies tastes so delicious.
Eggless,Vegetarian,Healthy Grain,Healthy Sugar
Wholewheat flour - 125g
Corn flour - 5g
Cocoa powder - 20g
Baking soda - 1/4 tsp
Salt - 1/8 tsp
Khandsari sugar (powdered) - 60g
Unsalted Butter (room temperature) - 90g
Ginger powder - 1 tsp
Ground cinnamon - 1/2 tsp
Ground clove - 1/8 tsp
Grated nutmeg - 1/8 tsp
Milk - 30-40 ml (Use as required)
For filling -
Apyura coconut spread - 40-50g
�"Sift wheat flour, corn flour, cocoa powder, baking soda & salt, ginger powder, ground cinnamon, ground clove, grated nutmeg & keep aside
�"Take softened unsalted butter in a bowl and beat it till its light & fluffy
�"Scrape the sides, add sugar & beat again for a min
�"Now add the flour in 3 parts and combine well using a spatula. Add milk, if required, to combine and make a smooth dough
�"Take a tbsp dough inside a parchment paper, cover with another piece of parchment paper and roll it gently into a circle with thickness around 1/4 inch.
�"Take 1.5 tsp Apyura coconut spread and place at the center and seal sides and roll to make a small ball like shape. Its fine if some spread oozes out. They will eventually get baked nicely.
�"Place it on a baking tray lined with parchment paper.
�"Repeat same with rest of the dough.
�"Once done, put the baking tray in refrigerator while you preheat oven at 160⁰C for 10 mins
�"Bake the cookies at 160⁰C for 18 mins for soft cookies and for 20-22 mins for crunchy cookies.
�"Cool the cookies on a wire rack & store in an air tight container
�'I got 14 cookies from this recipe. This may vary depending on the size you bake.
�'Baking time depends on thickness of cookies & amount of cookies you bake at a single time. Thinner cookies may take 5-10 mins less time to bake.
�'In case the cookies are a bit soft after cooling, put them back in oven & bake for 5-10 mins more. They will turn crispy.
�'You may increase the khandsari sugar quantity by 10-20g if you like.
