For those busy mornings, we need not compromise with our health when we can have a healthy tasty breakfast with little preparation ahead.
Coconut Mango Chia seed pudding with fresh strawberry compote - a delicious breakfast that looks lovely and tastes even better 😊

INGREDIENTS
For coconut chia seed pudding :
Coconut milk - 250 ml
Chia seeds - 2 tbsp
Honey - 2 tbsp
Fab coconut flavour - few drops

For strawberry compote :
Fresh or frozen strawberries - 1/2 cup
Sugar - 2 tbsp ( I like my compote little tart, pls feel free to add sugar according to your taste)
Lemon juice - 2 tsp
Cornflour - 1 tsp
Water - 2 tbsp
Fab strawberry flavour - few drops

For Mango Curd :
Fresh Mango puree - 3/4 cup
Sugar - 4-5 tbsp
Cornflour - 2 tbsp
Agar agar - 1/4 tsp
Lemon juice - 2 tbsp
Butter - 2 tbsp
Fab mango flavour - few drops
METHOD

For coconut chia seed pudding :
1. Mix everything in a bowl and rest for 15 mins.
2. Whisk again after 15 mins and keep it in fridge, preferably overnight.

For strawberry compote :
1. Take strawberries in a pan and add sugar to it.
2. Heat this mixture till strawberries gets little mushy.
3. Prepare cornflour slurry with cornflour and water and mix it with strawberry mixture.
4. Cook till the mixture coats the back of spoon.
5. Add lemon juice just before taking it off from heat, along with fab strawberry flavour and mix well. Let it cool.

For Mango curd :
1. Mix the mango puree,agar agar,cornflour,sugar in a heavy bottom pan.
2. Cook over low heat for 3-5 mins, stirring continuously till it thickens.
3. Take off the heat and add butter , lemon juice and fab mango flavour and mix well. Let it cool.

Assembling

Take your favourite jar or glass and layer the coconut chia pudding, strawberry compote and mango curd, the way you like 😊 garnish it with some fresh strawberries,mango chunks and mint leaves for extra freshness. And your good looking tasty breakfast is ready to serve 😍
