This is authentic recipe of Eggless Plum cake.

Christmas is right around the corner & we have been baking something magical in our oven for you - Our Rich Christmas Plum Cake ! 🎉🎊 🎉🎊

The dried fruits are perfectly plumped up with rum and ready for Christmas. It's cake time!

For the cake
1 + 1/4 cup maida
1/4 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1/8 teaspoon ginger
1/8 teaspoon clove
1/8 teaspoon grated nutmeg
1/2 teaspoon orange zest
1/2 teaspoon lemon zest

1/2 cup Unsalted butter
1/4 cup flavour less oil
3/4 cup brown sugar
1 cup curd
8 drops of FAB Pineapple essence
1 teaspoon of FAB Vanilla essence

For soaking at least 10 days before
1 cup RUM (1 cup rum + 1/8 cup brandy)
1/4 cup raisins
1/4 cup dried apricots
1/8 cup dried cranberries
1/8 cup blueberrie
1/2 cup tutti frutti
1/8 cup prunes
1/8 cup black munakka
1/8 cup Seedless dates
1/8 cup

For folding
1/4 cup almonds
1/4 cup cashews
1/8 cup Pecans

1. In a big bowl, take the rum mad brandy mixture..

2. Add tutti frutti, raisins, dates, dried apricots, dried cranberries blueberrie Munakka and prunes to the mix and keep it in a jar for approx 10 dyas.

3. Pre-heat the oven to 160 degree C and line an 8 inch round cake pan with parchment paper.

4. In a bowl whisk together flour, baking powder, baking soda, cocoa powder ,spices, orange & lemon zest and set aside.

5. Whisk together brown sugar, butter and the oil in a separate bowl until it becomes pale in colour and brown sugar is well dissolved.

6.Now add yogurt to the butter oil and sugar mixture and mix well.

7.At this stage add FAB Pineapple & Vanilla Essence.The smell of these essence fill my's too good

8. Gently fold in the dry ingredients and mix until everything is well combined and there are no large flour pockets in the batter. Do not over mix at this stage.

9. Keep a small portion of the soaked dry fruits aside and fold in the rest along with the chopped almonds, cashews and pecans in the batter and transfer the batter to the prepared cake pan.

10. Bake at 150C for 55-65 minutes or only until a skewer inserted in the center comes out clean.
Note : pls refrain yourself from opening the oven before 55 min as the cakes can sink in between due to temp change .

Allow the cake to cool and serve!
Voila you are done ..

For more intense flavour you can feed the cake with Rum once it cools .

After baking let it cool on wire Rack..
Feed with Rum
And wrap in butter paper and later cling film .
Keep in cool place ..
Stays good for 15 days in normal temperature.

Baker Tips/Notes

Bake slow and for long time.
Soak all dry fruits at least 3 months befor .
Wrap in cling film after feeding Rum.

Mom to my 7 yrs Old awesome son Dhruva.. 4.5 yrs back he was detected with Autism..Ton of effort and with Only food me and my Husband Capt.Rishikant Narayan have reversed his autism and we are currently working with 140 families across the globe free of cost since last 4 yrs .. That was the time when we understood the Power of Food in our life ..Dhruva loves Icecream but whenever he used to get store bought (which was full of chemicals and presevative) has serious side-effects so one fine day decide to make icecream at home ..Later gave to family and friends and they were amazed with quality and taste .. Their feedback encouraged me to do more and later everyone requested to bake cakes ultimately started baking .. Although made my first cake when was in class 8th .As a teenager never thought after leaving my 9-5 job will Persue my Passion..The best part is can bake and decorate cakes 24 hrs and never feel tired ..just Started my small business with a thought that people should eat quality stuff.. The satisfaction that comes from doing what I love the most, every single day, is beyond words! Slowly people saw our work and orders kept coming. Since then there was no looking back. I’ve never had any formal training, although I’d love to! I just watched a lot of tutorials online, read recipe books, browse through Pinterest to get inspirations and practice, practice, practice. A small oven in our small kitchen, and now we have a bigger oven gifted by Hubby – but in the same ‘ol ‘small’ kitchen. It’s amazing and humbling to see how this hobby has grown into a cute little business – that keeps me busy most times . As a Home baker we choose to bake every bread, every piece of cake with appropriate ingredients to taste and health, just the way they bake it for family. And while baking for family there is no compromise on the quality. We have always assured our products have a 100% check on quality.As Our Small startup says "QUALITY IS OUR RECIPE". Rishi has always given me the freedom to do what I like and have always encouraged me to chase my dreams. Inspite of the challenges we faced with Dhruva's health he always promoted and gave a strong back up to me .. My Mom is my backbone she was unconditionally there for me whenever I need her . Slowly I started making cakes for friends’ birthdays and family gatherings. I also created a page on Instagram and Facebook .Once people started noticing our work and tasted our cakes, orders kept coming and the feedback was very promising and motivating. Social media also helped us get more visibility. Within a year, we have created more than 100 cakes. I’m very happy about my decision to start this business and aspire to achieve many more milestones in this journey. We are v glad to introduce our signature Finest Belgian chocolate cakes in my hometown..where people are not aware with the taste of covetaure single origin chocolate and all indian flavours our most sold one's are Rasmalai cake .. if you love cream cheese and decadent chocolate cakes, treat yourself to the finest from some of our Signature Cakes .
