Short Recipe Description

These spinach bubble bread infused with oregano & chilly extract, is made with wholewheat flour and extra virgin olive oil.
Serve it warm with your favorite dip and enjoy 😊

INGREDIENTS
�'Wholewheat flour - 400g
�'Warm Spinach puree - 200ml
�'Instant yeast - 1/2 tsp
�'Honey - 1 tsp
�'Rock salt - 1.5 tsp
�'Warm water - 10-20 ml
�'Sesame seeds - 2 tbsp
�'Extra virgin olive oil - 3 tbsp
�'Fab Natural Oregano extract - 3/4 tsp
�'Fab Natural Chilly extract - 3/4 tsp
METHOD

�"Blanch the spinach and make a puree. Warm it a bit.
�"Activate yeast using a tbsp of lukewarm water & a tsp of honey.
�"Take wholewheat flour in a bowl. To it add salt in one side and yeast in the other side and mix gently. Now add the warm spinach puree gradually and combine with the flour gently.
�"Since every flour absorbs liquid differently, you might need some extra warm water to combine the dough.
�"Now knead the dough gently. I used a hand mixer. Once the window pane is 80% achieved, add 1.5 tbsp of olive oil, oregano extract & chilly extract and knead till the dough becomes smooth & pliable.
�"Oil a bowl and put this dough inside. Apply some oil on it so that it doesn't dry out.
�"Cover it with a damp muslin cloth. Keep the bowl in a warm place and allow it to rise to double its volume.
�"Once it doubled in size, gently punch out the gases and divide the dough into equal sized balls.
�"Line a baking tray with parchment paper. Make small rolls and place on the baking tray, arranging all the rolls into a tree structure, making its trunk as well as cutting a star shape using a cookie cutter for the top.
�"Leave a bit space between each roll. The space will be filled up during the second rise.
�"Apply milk wash on the rolls & cover it for a second rise. This would take 10-15 mins.
�"Meanwhile preheat the oven at 180⁰C for 15 minutes. Again apply some milk wash on the bubble rolls, sprinkle sesame seeds on top and bake it at 180⁰C for 17-18 mins.
�"Once done, take out the bubble bread and brush generously with olive oil. Remove it from tin and keep it on a wire rack, apply some more olive oil & cover with a muslin cloth for a while.
