INGREDIENTS

			Recipe Name :- Chatpata Guava  doughnuts  For doughnuts Ingredients 180 GM's maida 2 GM's improver 1 .5 GM's instant yeast 10 GM's sugar 30 GM's egg 70 GM's water 25 GM's butter ( salted ) 1/4 TSP of chatmasala or chilli Cooking oil for frying For Doughnut filling Ingredients 1/2 cup cream 1/8 cup milk Few drops of fab green guava essence 2 tbsp castor sugar 3 tbsp custard powder 1/2 cup Guava puree ( desseeded) For Doughnut Glazing 100 GM's white chocolate 50 GM's milk 2 drops of fab green guava essence ( optional ) Few drops of green colour Chilli flakes or chatmasala to sprinkle .  | 
		
METHOD
Recipe Name :- Chatpata Guava  doughnuts

Preparation and cooking time :- max  2 hrs 
Ingredients
180 GM's maida 
2 GM's improver 
1 .5 GM's instant yeast 
10 GM's sugar 
30 GM's egg 
70 GM's water 
25 GM's butter ( salted )
1/4 TSP of chatmasala or chilli 
Cooking oil for frying
Method 
Take a sugar and yeast in a bowl and add water (  30 GM's) init ,keep aside until yeast activate.In separate bowl add maida , improver , chatmasala  egg ,water  (40 GM's ) ,and yeastsugar mixture , with the help of doughmixer stand mix it for 3 minutes until dough get soft and bounce back or (can knead at table top for 6 minutes)  rest the dough in a bowl for .
First proofing 30 to 40 minutes
 After proofing punch the dough and roll it in a tray with maximum thickness of 1/2 inch
Cover with wet cloth put it for
Second proofing rest for 15 to 20 minutes 
Than cut  with help of doughnut cutter or ring 
Rest for 5 minutes , heat the pan , add cooking oil and  fry the doughnuts  until it get golden brown in colour .
For filling 
1/2 cup cream 
1/8 cup milk
Few drops of  green guava essence 
2 tbsp  castor sugar 
3 tbsp custard powder 
1/2 cup Guava puree ( desseeded)
Method 
Whip the cream and sugar  add all the ingredients , lastly add guava puree and put it in fridge to get chill , Make a hole in doughnuts and pipe  the filling into dough nuts with the help of piping bag .
For Glazing 
100 GM's white chocolate 
50 GM's milk 
2  drops  of fab green guava essence ( optional )
Few drops of green colour 
Chilli flakes or chatmasala to sprinkle .
Method 
Lukewarm milk add it in melted chocolate add essence ,and few drops colour mix it and glaze half of  the doughnuts ,decorate it with chilli and chatmasala sprinkle ... ready to serve.
Assembling
After cooling down ,fill guava filling into the Doughnuts with the help of piping bag ,mark a hole in doughnuts and fill ,after filling glaze the top part of the doughnuts and sprinkle some chilliflakes and chatmasala

After second proofing the Doughnuts put the shaped doughnuts in the fridge for 10 minutes
