INGREDIENTS
1- butter for sautéing - 2 Tablespoons
2- onion, chopped - 1 large
3- butter, melted for soup - 1/2 cup
4- all purpose flour - 1/2 cup
5- half and half cups chicken broth or vegetable stock - 4 cup
6- fresh broccoli - 500 gm
7- carrots, julienned - 2 cups
8- Salt and pepper -
9- sharp cheddar cheese grated - 350gm
10- Fab Premium Oil Soluble Cheddar Cheese flavor - 1Tsp
METHOD

1- Sauté onion in butter.
2- Set aside.
3- Whisk butter and flour over medium heat for 3-5 minutes.
4- Stir constantly Add chicken stock, you can also use vegetable stock still whisking.
5- Simmer for about 20 minutes.
6- Now add broccoli, carrots and sautéed onions.
7- Cook over low heat until veggies are tender, about 20-25 minutes.
8- Add salt and pepper.
9- The soup will thicken slowly.
10- Carefully transfer soup mixture to a blender or food processor to blend.
11- You can use an immersion blender, which is what I used and blend to your desired consistency.
12- Return soup to pot and then place on low heat and add cheese and Fab Premium Oil Soluble Cheddar Cheese at this point in time.
13- Stir until the cheese has completely melted and blended.
14- Serve..
