Short Recipe Description
A traditional dessert presented in an innovative way
|Maida , sugar , cherries , mascarpone mousse. Fresh cream , agar agar, neutral gel , red colour , kirsch essence|

Modern bite size Black Forest Entremet
100 gms maida
50 gms butter
250 gms fresh cherries ( if not available then you can take frozen )
100 gms castor sugar
3 gms agar agar
100 gms mascarpone mousse
100 gms fresh cream
100 gms dark chocolate
200 gms neutral glaze
Deseed the cherries and cook them in a non stick pan .
Mix the agar agar with sugar and once the cherry purée starts bubbling add the sugar mixture and cook for 3-4 mnts .
Switch off the flame and let it cool amd then add in a the Kirsch essence from Fab Flavours & Fragrances P. Ltd
Cut the cake into thin slices and per the mould used
Heat the chocolate and temper till you get a nice glaze
Beat the mascarpone mousse till smooth . In a separate bowl beat the cream till soft peaks . Mix the cream and cheese together .
Coat the mould with moulded chocolate,and pipe in a thick layer of the mascarpone mousse .now pipe in a layer of the cherry compote .
Lastly put a layer of cake and seal your mould completely.
Let it set for 8-10 hours
Demould your entremet and place it over a tray .
Heat the neutral gel to 33 degrees . Add bright red colour and glaze your entremet .
Be patient while demoulding the dessert
