INGREDIENTS
For the puris 1 1/4 cup maida 1 tbsp heaped chroti rawa 1 tsp chilli powder 1 tbsp hot oil Salt Oil for deep frying For the filling 2 tbsp oil 1 tsp mustard Hing 1/2 tsp 1 tsp udid daal 1/4 cup rawa 1/2 cup coconut 2 green chillies spicy 7-8 karipatta leaves finely chopped 2 tbsp corriander leaves finely chopped 1 tsp besan 1 tsp sambaar powder Salt to taste 2_3 drops of Fab premium oil soluble green chilli essence 2_3 drops of Fab oil premium oil soluble lemon rind essence |
METHOD
Mix all the ingredients for the puris and bind into a stiff dough.not too hard or too soft.
For the filling
Heat oil. Add the mustard, udid daal, hing.add the chillies, karipatta, coriander leaves, fry. Add sambaar powder. Add the grated coconut besan and rawa and fry nicely till raw smell goes and the coconut is nicely fried.add in salt.keep aside to cool.add in the 2 essences
Assembling
Roll out puris of the dough..Add in the filling.close it and roll into a thick ouri. Deep fry on med flame till golden brown on both sides.This has to turn crisp like a kachori so dont increase the flame
Baker Tips/Notes
Watch out for the chillj essence.It not only has flavour but also the chilli spice punch..so mind the amount of green chillies u might want to add in. There shud b no water in filling and hence the lemon essence to add in the punch of citrus without the liquid element
