Short Recipe Description

It's been two years now since I had the famous Mumbai' s Badshahi Falooda
Covid has taken away the basics that once we would take for granted . No Crawford Market trips would be complete without savouring the famous BADSHAHI FALOODA
So , a small effort to revisit the memory

INGREDIENTS
Seviyan Falooda - 1 pkt , boiled in sugar water and dipped in ice cold water ( as per description on the pack )
Sabza -2 tbsp ( soaked in water )
Kulfi - 200 gms
Kesar masala milk -1 cup
Roasted flaked almonds
Almond essence from Fab Flavours & Fragrances P. Ltd
Kulfi
1 lt full fat milk
Sugar- 200 gms
Cornflour -2 heaped tbsp
Kesar - pinch
Almond essence- 10 drops
Boil the milk with kesar and reduce to half add sugar and cook for another five mnts
Dissolve the cornflour in some cold milk or water and add the slurry to the milk till it comes to thick custard like consistency.
Let the mix cool down go to room temperature and add the almond flavour here. Mix well and freeze the kulfi in an airtight container.

Milk -2 cups
Sugar -1/3 cup
Kesar
Almond essence
Boil the milk with kesar and sugar for approximately 15-20 mnts and slow flame .
Cool the mix and add the almond flavour .

Assembling

In a bowl adduce cold kesar milk till the bowl is 1/2 full . Add the seviyan falooda
Add two big scoops of kulfi , now add the Sabja.
Serve with slivered pistachios and almonds .
Serve ice cold .
