MY Mom is now 86 , a true BENGALI and she eats only sweets , lunch , dinner, breakfast she loves to eat sweets . We relate my mom with sweets. Her and my daughte'r favourite is RASMALAI .

INGREDIENTS
ALMOND SPONGE
4eggs
100 gm castor sugar
60 gm APF
40 gm almond meal
1 tsp baking powder
FAB FLAVOUR ROSE 1 tsp
METHOD

Beat eggs till light , white and soft peak now add sugar beat for shiny smooth ribbon structure. Now add Esc , fold in flour , baking powder, almond meal sifted . Be gentle but swift . Now bake at 170 degree for 25_30 min till centre comes clean.
RASMALAI_BALLS _ take 1/2 litres of cow milk boil , cool for 5 min now add vinegar( 2tsp and water 4 tsp )slowly to make CHENA for sweet.
Drain in muslin cloth hang for 30 min to drain all water.
With your palm knead for 10 min till smooth. Make smooth balls flatten it , can insert pinch of sugar while making balls.
SYRUP__ 2 cups sugar & 5cuos water with cardamom powder and FAB ROSE ESCENCE .
let boil then add balls cover and cook for 10_15 min .take out and cool it .
CHOCOLATE MOUSSE__
Melt white chocolate _100 gm
Add scalded amul cream 100ml
Whisk and later add Butter 2tbsp and 2tbsp icing sugar.
Beat all well.
RASMALAI MILK__ Boil 1 kg milk then reduce to 750 gms . Add sugar 1/2 cup and mix well add colour/saffron and cardamom powder and FAB ROSE FLAVOUR__cool add Pista , almond chopped.

Assembling

IN serving dish place almond sponge soak in rasmalai milk
Soak rasmalai balls squeezed and in chocolate mousse, Kept for 2 hours.
Place on sponge and pour chocolate mousse on top . Garnish with Pista, almonds, Rose petals.
