About Recipe

Ghevar is a North Indian sweet traditionally associated with the Teej Festival.It is disc-shaped sweet cake made with maida and soaked in sugar syrup.

Ingredients
FOR BATTER-
½ cup ghee
1 block ice
2 cup maida
½ cup milk, chilled
3 cup water, chilled
1 tsp lemon juice

FOR SUGAR SYRUP-
1 cup sugar
¼ cup water
Fab saffron essence
1/4tsp-cardmom powder

OTHER INGREDIENTS-
Oil/ghee for deep frying
Dry fruits, for garnishing
Method
  • Firstly, take ½ cup ghee and rub it along with ice block.
  • Now add 2 cup maida and crumble well.Further, add ½ cup chilled milk and give it a rough mix.
  • Add 3 cup of chilled water, 1 tsp lemon juice, mix it with your hand to bring it to a smooth flowing consistency.
  • Pour 2 tbsp of the batter keeping a good distance from hot ghee.
  • The batter will splatter and later the froth subsides. Repeat 4-5 times nd make a whole in centre with the help of knife/wooden stick.
  • Pull the ghevar out once cooked, and drain off the ghee completely.
  • Pour the sugar syrup over ghevar, garnish with chopped nuts and sprinkle cardamom powder.
  • FOR SUGAR SYRUP-
  • Add sugar,water,fab saffron essence nd cardamom powder into a saucepan, continue to boil it ti get one string consistency.
