Biryani is a rice dish made by cooking basmati rice with mix veggies, herbs & biryani spices.This is my new experiment I change this biryani name also Dum to Rum...

Ingredients
Basmati rice – 1 cup
Onion – 1
Green chilli - 2
Ginger-garlic paste - 2 ½ tsp
Tomato-1
Mixed Vegetables -2 cups
Mint leaves- handful
Coriander leaves- handful
Fab Rum essence-1/2tsp
Curd-1/2cup
Lemon juice -1 tbsp
Turmeric powder-1/2tsp
Red chilli powder -1 tsp
Coriander powder – 2 tsp
Biriyani masala – 2 tsp (I have used Everest biryani masala)
Salt as required
For the seasoning 
Oil – 1 tbsp
Cloves -3
Cardamom -2-3pods
Cinnamon – 1 inch piece
 
For Garnishing 
Fried onions (optional)
Roasted cashew
Method
  • How to prepare fried onions for garnishing:
  • Cut onions into thin strips and fry it in oil until golden brown.
  • Add it before serving.
  • it's optional.
  • Cut carrots, beans and potatoes lengthwise. Chop tomatoes.
  • You can use a mix of carrot, beans, cauliflower, fresh peas and potatoes for making this veg biryani.
  • Wash and cook basmati rice atleast 80%, drain the water and keep it aside.
  • Wash cauliflowers,cut it into florets and put it in boiling water with a little salt for 5 minutes. Drain the water and keep it aside.
  • Vegetable biryani recipe
  • Method:
  • Heat oil, add cloves, cardamom and cinnamon, saute for a 2-3 seconds, then add onions and saute till it turns transparent.
  • Now add ginger-garlic paste and saute for a few more minutes.
  • Add green chillies, all the vegetables, chopped tomatoes, fab Rum essence,turmeric powder, chilli powder, coriander powder, biryani masala,salt,curd and saute for 10-15 minutes.
  • Now layering the biryani.Take one kadhai first layer is rice then second layer vegetables..do it one more time and garnish with some mint leaves and coriander leaves. Cook for 15-20 min more in low flame.
  • Garnish with fried onions and cashews and serve hot with raitha or papad.
